The Secret Language of Oxidation: A Journey Through Six Teas

The Secret Language of Oxidation: A Journey Through Six Teas

Why does Longjing taste like a spring breeze, while Zhengshan Xiaozhong feels like warm honey on the tongue? The answer lies in one quiet, powerful process: oxidation.

This weekend in Toronto, we invite you to join a one-of-a-kind tea tasting event that traces the subtle transformation of tea through six carefully chosen cups. From zero to full oxidation, this curated lineup will take you on a sensory journey across the spectrum of flavor, aroma, and color.

Here’s what we’ll be tasting:

🍃 1. First-Pick Longjing (No Oxidation | Green Tea)
Harvested in early spring, this tea is light, sweet, and vegetal. A sip feels like a breeze through new leaves—delicate, crisp, and pure.

🌸 2. Light Fragrance Tieguanyin (Light Oxidation | Oolong)
A floral, bright infusion from Anxi. With its translucent liquor and orchid aroma, this is the perfect gateway to the world of oolong.

🍑 3. Zhangping Shuixian (Light-Medium Oxidation | Oolong)
A rare “pressed cake” oolong from Fujian. Expect mellow fruit notes, a honeyed finish, and a texture as soft as velvet.

🔥 4. Minnan Shuixian (Medium Oxidation | Oolong)
Roasted with restraint, this tea reveals depth and warmth—rich, toasty, and layered, a true taste of southern Fujian tradition.

🍯 5. Oriental Beauty (Heavy Oxidation | Oolong)
A jewel from Taiwan, famous for its natural honey aroma and ripe fruit sweetness. Elegant and expressive—tea’s version of haute couture.

🌲 6. Zhengshan Xiaozhong (Full Oxidation | Black Tea)
The ancestor of all black teas. Deep and smooth, this classic offers a choice between smoky pinewood and modern floral-fruity notes.
