This past weekend, we hosted a quietly unforgettable tea gathering in North York, Toronto, centred around the theme of “Roasted Oolong.”

When people think of “roasting,” they often think of coffee. But in Chinese tea culture, 焙火 (bèi huǒ) — roasting over charcoal or electric heat — is an art form of its own. It transforms the personality of a tea, layering complexity, warmth, and depth into every leaf.
Our tasting featured five unique roasted oolongs, ranging from lightly roasted floral types to deeply roasted teas with rich charcoal notes. Each one offered a new experience — like turning pages in a novel, sip by sip.
